When did we get into the habit of buying lunch out every day? It costs a fortune and creates BILLIONS of bits of single-use packaging that mostly ends up in landfill. Recycling just isn’t working – we need to stop using so many sandwich packs, salad boxes, juice bottles etc. It’s painful but true!
Lunch is so often over-looked, when in fact, we need to enjoy our mid-day break more than ever! Whether you eat lunch at home or at work, I think it can become something to really look forward to each day. And I have lots of delicious, quick ideas about how to help with that. With the planet needing our help more than ever, my lunch ideas focus on plants, pulses and grains – you don’t need meat and fish at lunchtime.
